The traditional method (méthode traditionelle or méthode champenoise), the Martinotti (or Charmat) method, and the ancestral method (méthode ancestrale) are the three methods used to make superior sparkling wine. Champagne, cava, and crémants are made following the classic process, which involves reinitiating still wine with a secondary fermentation (performed in the bottle) using a yeast and sugar mixture. These wines are aged on the lees in bottles before being disgorged, dosed (if desired), and re-corked before being sold.

The sweetness of Champagne/sparkling wine is the key aspect to classify it. The driest (meaning least sweet) classification of Champagne is Brut, which means "dry, raw, or unrefined" in French. Champagne must have fewer than 12 grams of added sugar per liter to be declared Brut. The most popular sparkling wine style is Brut Champagne.

The characteristic blue Geisweiler tint, known in France as "Bleu Royal," recalls more than two centuries of tradition and winemaking. The sparkling wines are prepared using the classic Méthode (or Champagne process), which includes a second fermentation in the "butelj".
